Enzymes aids in the digestion and absorption of foods in the body&#8217;s digestion system. Cooking foods is believed to reduce the nutritional value of food.</p>

<p><strong>Preparation: <br /></strong>-Wash arugula, strawberries andÂ blackberries/cranberries and set aside to dry.<br />-Cut strawberries in quarter or halves<br />-Slice walnuts in halves<br />-Mix arugula, strawberries, blackberries/cranberries, cinnamon and nutmeg<br />-Top salad withÂ balsamic dressing of choice.<br />Serves 4</p>

<p>Ingredients:<br />-1/2 cup flax seeds<br />-1/2 cup flax meal<br />-6 medium tomatoes<br />-1 cup sun-dried tomatoes, soaked 2 hours or more<br />-1 tablespoon lemon juice<br />-1/4 cup fresh basil<br />-3 tablespoons dried Italian herb mix<br />-3 medium onions<br />-1 clove garlic<br />â¢ Grind all ingredients in a food processor<br />â¢ Spread evenly and thinly over 2 Paraflexx dehydrator trays, right to the edges and then use a knife or spatula to score into individual squares .<br />â¢ Dehydrate at 105 degrees for 3 hours then invert onto another mesh dehydrator tray to finish drying in the dehydrator for a further 10 â 18 hours.</p>
<p>Pine Nut Cheese Spread<br />Ingredients</p>
<p>-1/2 cup pine nuts<br />-1/2 cup macadamias<br />-2 teaspoons lemon juice<br />-1/4 teaspoon salt<br />-2 teaspoons nutritional yeast<br />-1/4 cup water<br />â¢ Grind all ingredients in a food processor.</p>
<p>Tomato Sauce<br />-4 medium tomatoes, de-seeded<br />-1/4 cup sun-dried tomatoes, soaked 2 hours or more<br />-1 soft date<br />-1 clove garlic<br />-2 teaspoons olive oil<br />-1 tablespoon fresh basil<br />-1 tablespoon dried oregano<br />-2 teaspoons lemon juice<br />â¢ Blend all ingredients in a high-speed blender until smooth.</p>
<p>Pesto<br />-2 cups basil, tightly packed<br />-1 tablespoon minced rosemary<br />-1/4c pine nuts<br />-1T olive oil<br />-1/4t salt<br />-2t lemon juice<br />â¢ Pulse all ingredients in a food processor until broken down, but leaving some texture to the finished pesto.</p>
<p>Assembly<br />â¢ Start with the flax cracker as a base to which you&#8217;ll add a layer of the nut cheese spread.<br />â¢ Next comes the tomato sauce and then top off with some pesto.<br />â¢ Garnish with olives, capers and a sprinkle of Italian seasoning.</p>
<p>Variation: This recipe works great using marinated whole mushrooms as a base instead of flax crackers.</p>
<p>â¢ Marinate 12 mushrooms in 1/4c tamari and 1/4c olive oil for 2 hours or more.<br />â¢ Fill the mushroom caps with the nut cheese, tomato sauce and pesto. Going heavier on the amount of pesto works really nicely with mushrooms.<br />â¢ Once the mushrooms are stuffed, place in the dehydrator at 105 degrees F to warm through 1 &#8211; 2 hours.<br />Provided: Russell James the Raw Chef<br />Â </p>

<p>Smoking meat fish and vegetables has been very popular throughout history and many generations as can be seen by the sheer variety of smokers for sale. Many have discovered the great taste that smoking infuses into all types of foods. Smoking food can be used to flavour, cook or even preserve food. Nowadays there are lots of alternatives available for us if we want to enrich the taste of our food by smoking it. In fact the choice of home smoker can be daunting.</p>
<p>Let&#8217;s talk about the fuel the most common choice is wood or wood products. The hobbyist/backyard home smoker can use wood, charcoal, propane or even electric to fuel their cookers. The important thing to remember is that you need a smoke source, so you are going to need some types of wood, logs, chunks or chips to provide the smoke for your cooker In North America, hickory, mesquite, oak, pecan, alder, maple, and fruit-tree woods, such as apple, cherry and plum, are commonly used for smoking</p>
<p>Smoke is an antimicrobial and antioxidant, but smoke alone is insufficient for preserving food in itself, unless combined with another preservation method. In the past, smoking was used in combination with other techniques, most commonly salt-curing or drying. The main problem is the smoke compounds adhere only to the outer surfaces of the food; smoke does not actually penetrate far into meat or fish. In modern times, almost all smoking is carried out for its flavor</p>
<p>Cold smoking can be used as a flavor enhancer for foods such as, beef, pork chops, chicken breasts, salmon, scallops, and steak. The food item can be cold smoked for just long enough to give some great flavor. Some cold smoked foods are then, grilled, baked or roasted, or even saut</p>
