Cream of Mushroom & Lemon Soup Eggplant Casserole

Curried Rice Salad (hot)

Ingredients:

2 cups cold brown rice (cooked)
1 onion chopped
1 red capsicum chopped
1 green capsicum chopped
1 cup grated carrot
1 cup chopped celery
2 teaspoon fresh ginger grated
2 teaspoons curry powder (or to individual taste)
black pepper to taste

Method:

1.Combine all ingredients in Chinese wok or frypan.

2.Keep ingredients moving so they do bot stick to the base of the pan.

3.Cook for 4-5 minutes. Serve immediately.

Serves 4-6
